Mashed Cauliflower

I have to share my most favorite vegetable. Cauliflower can be made so many different ways and so delicious. I recommend Mashed Cauliflower if you choose to do a low carb lifestyle diet change. It’s yummy and so satisfying!

I can not share the exact recipe on here, because this is what I did. I went on Pinterest and searched the best way I can replace mashed potatoes. I found mashed cauliflower and I read a couple of recipes and decided to add my own way of cooking and amount of bacon and butter that I will add. Here is the recipe of some mashed cauliflower that I did look at.

Cauliflower comes cut up for you!! No, not just the broken into crowns, they are chopped like riced cauliflower. It’s great isn’t it? I recommend it, especially if you don’t have a lot time like this mommy does – I actually took these photos and made this while my son crawled around my legs wanting my attention.

First, cook your bacon. This is my most favorite part of mashed cauliflower, so I use an entire package of bacon. Plus, I save the bacon grease to flavor vegetables or my chicken – its soo yummy! Set aside bacon.

Preheat the oven to 450 degrees.

In a large pot add just a bit of water and add the cauliflower (I do not microwave it) once the cauliflower gets warm, I  use a potatoe masher and mashed the riced vegetable as much as I can. Here, you have a choice, you can put your cauliflower (with butter) in a blender, or if you are like me, I like more consistency in my mashed cauliflower, just like I do with mashed potatoes. Here, add about 2 cups of cheese, 1 cup of sour cream, and 1/4 cup of butter, mix together. Then add your bacon chopped up.

Place your mashed cauliflower in a dish and place in oven for about 15 min.

Take out and there you have it – your mashed cauliflower! Delicious!

Week Five

I’m really giving up on weight. How many times have you said that? Concerns about your weight is that horrible ex that keeps coming back and is no good for you.

It’s Week Five and I’m ecstatic about  my results! Giving up on weight, have to..why? I’ve been secretly weighing myself daily- and I WISH I could have wrote down my weight Saturday- now THAT was a good weigh in day. Today, seems like I’ve gained 2 more pounds except I also have to consider the fact that I’m taking more water weight in – with my new drink – Apple Cider Vinegar -Lemon.

Count your macros! Here’s my favorite- mashed cauliflower!

I have dropped down another half inch from my waist. Compared my pictures and now I’m starting to see the difference. What is that saying, it takes 4 weeks for YOU to see your body changing, 8 weeks for your friends and family, and it takes 12 weeks for the rest of the world- DON’T GIVE UP. It’s a great saying. I’ll have to use that as my feature image for you guys. Reading my past keto weeks- you would thought that I would have given up, but I’m not going to.

It’s going to be real hard, summer is here, and we are making lots of trips to the pool and lots of small vacations with the family…it’s hard being on keto. What’s harder is explaining to family what kind of diet you are doing, the first thing they say “oh yea, that low carb business..” Well yes and no – I always begin my sentence. It’s SO much different than that. Ever since I started Keto, I have learned so much of what to eat and not to eat, and I learned so much about my macros and how close I am to my normal weight how everything affects it.

Plan in the future

I think I found the one. I’m ready to walk down the alter with it. Yes, the ketosis diet, I’m ready. When you have been using carbs for fuel your entire life, it takes a long long time for your body to adapt to using fat for fuel and not depend on carbs. Now you’re asking “Are you ever going to eat carbs again?” Of course I am! Also, I’m moving soon – with a bigger kitchen and I’m starting to learn my mother’s native country (Cambodia) cooking. Which Cambodia main source of food is starch, rice. It’s cheap, and fed a lot of mouths, and the love that pours into my soul when I eat it. I plan to fully have my body adapted to fat, while working out, and be able to carb cycle, making sure my body is adapted properly. It will be tough in August, but I know I can make it through.

Thanks for stopping by and following me on my Keto Journey!

How I use Vinegar to clean my containers

Who else uses Vinegar like this? I use Vinegar to clean almost everything in the house. Mainly I use vinegar to clean my containers that I hold milk in for the baby. Let’s face it, as much as a super mom I would like to be, sometimes I forget to clean milk immediately out of a container. We all have smelled that…YUCK.

I normally use Distilled White Vinegar
Now I add just vinegar and water to the container and let sit for a day. It KILLS all the smell, make sure you have cleaned out the bottle first. You don’t have to add much vinegar, but however much vinegar you add, add twice as much water – and shake it around. After, cleanse it once more and there is no sour milk smell or vinegar smell!

Check out my post about how I make Bullet Proof Coffee!

I’ve heard of others cleaning the garbage disposal with vinegar, even the toilet. Any other vinegar suggestions! I like to hear them!

Finding your Google Analytics ID

I’m new to blogging- so if I had an issue finding anything new about my blog, I’ll share if I can help anyone else out!

I always have my Google Adsense up – so I can see where my blog stats are and where I need improvement at – its great to help you grow. What I didn’t realize that I couldn’t find my Google Analytic ID!

Here is how to find it:

  • First sign into your analytics account (You can simply type in analytics account in the web bar and surprisingly you might have already been signed in and waiting for you!)
  • Find Admin, click.
  • Find Account column and if you have more than one Acct, click on the one you are inquiring the ID about.
  • Under the Property column, there is a menu underneath.
  • Find the Tracking Info, click on that and also Tracking Code.

Really easy – and good use to let you track your blog! I hope that really helped!

Just a Box

The best toy in the world? Yes- the famous box. Will and I have been bad parents- and not keeping most of the boxes that we have had.

This was by accidental  – we were rounding up the boxes to place in our recycle bin by the door. Then I walked by and saw Xander playing in it. So lucky to have captured the picture just in time!

What else does your kids play with that are naturally free around the house? Chairs? Cabinets? Why do we even need toys?

Keto – Week 4

I apologize for skipping week 3. Things get busy and life seems to happen. I feel like I’m starting this blog very sour. Well cause I am. This blog is just about to may be my last. No. It won’t but I can’t lie to you and say that I feel that way. So I feel like giving up- why? Cause I’m not seeing the effects of keto like I have read about. I have been HONEST. Except when I overloaded on beer and sunflower seeds…is that it then? I cheated once and this diet will now never forgive me. Now that we are on Week 4 I have only lost a total of 5 pounds and 1 1/2 inch off my waist. My pictures good, but I can hardly tell a difference. Am I being too hard on myself?

What do I do when I’m feeling like giving up? First I’m ranting- so here I am- and to my best friend, I’m sorry for putting you through all this, but that’s what happens when you unknowingly signed that best friend document.

I can only think of a few things that can be stalling my weight loss, is exercise. My diet is on point, using my fitbit tracker and marking everything I eat- but if I worked out just a bit more, I think it would give my metabolism a quicker jump.

Protein is a tricky thing on keto, make sure you are getting enough but not too much. This is all about counting your macros.

I started reading this online: Not losing weight on Keto and it has been a real eye opener for me. Here is something I really need to pay attention to:

8. Short-Term Weight Gain and Fluctuations

You put on weight over a short period of time. This could happen if you had more carbs (even once!) than your daily limit (e.g. you went to a party). As you may know, there is a relationship between water retention and glycogen stores. If your body manages to store some extra glycogen, you also increase water retention. This happens literally from one day to the next. Don’t panic, it’s just water. Once you go back to your daily carbs limit it will take 2-3 days to lose the excessive water. Also, there are natural fluctuations related to hormone balance, especially in women.

This is from the website itself – and something I need to read daily like a bible. Remember when I cheated? Yea..I do cause I find it hard to forgive myself…but I went over my carb intake. This was just only being a week into being into keto. I have to understand I’m making a lifestyle change for my body, and I just started and ruined it with one day. This could be why my weight and or measurements haven’t gone as fast as I would like them to.

This is a great learning experience. I hope you learn a lot from following me – also from this website. Here is something I need to read every night before I go to bed:

Don’t weigh yourself more than once a week or even better, don’t weigh yourself at all. There are natural fluctuations related to water retention and hormonal balance. If you are a woman, you will notice these fluctuations more often. If you see no movement on the scales or even if your weight goes up, it doesn’t mean you are not losing fat. If you exercise, you may even see a little increase in weight, as muscles are heavier than fat. The important thing here is to concentrate on losing body fat. Don’t rely just on scales, use body tape, calipers, belts or clothes to see any changes.

Yes. WE ALL KNOW this is true. Then why do we continue to do this to ourselves? I have to stop that. I’ll still weigh myself weekly, but that’s enough counting the scale. I’ll write it down and keep moving forward. Especially if my clothes and my measurement tape is speaking to me loud and clear.

I still have to get my exercise fit in my life as much as I can- still working on that routine. Thanks for following and any keto suggestions are welcome here!

Keto – Week 2

Funny how a few numbers and inches can set you through a roller coaster of emotions. I gained back 1 pound, and lost an inch on my waist. How am I suppose to figure this one out?

I took my weekly pictures and I honestly can’t tell a difference yet. Maybe I’m being too hard on myself?

My workouts have not been as consistent as I want them to be. I was under 20 grams of carbs for a week before I started working out, and I had a couple of bad days- where I got light headed and dizzy even during a workout. Remember to listen to your body and pay attention.

One of my grilling days- which happens to be often- who else seasons their food in the ziplock bag itself? Never messy!

Still upping the water while I’m at home and staying consistent logging everything. I hope to see better results next week.

I cheated

It’s not as bad as it sounds. Really it isn’t. We went Rafting over the weekend – my very first time, and I got a little too excited with the carbs.

I’ll spit it out. I had some beer. Not my vacation beer: Blue Moon. I had what my friends call my bitch beer: Michelob Ultra. Now, defending my favorite beer, it has 95 calories and 2.5 grams of carbs PER drink. Which all can think it’s fine- but alcohol is alcohol- and it slows down any weight loss process.

How I feel like everyone is looking at me when I confess my sins….

Sunflower seeds.  This is the mistake I made the very first time I decided to do keto. I ate burgers and cheese and ate a WHOLE lotta sunflower seeds. Those carbs ADD up. Well, I had a lot of sunflower seeds for this trip.

All this- resulted in kicking me way out of keto. I felt like I was kicked out of the cool group at the high school lunch table. I am ashamed.

So I’ve expressed my sins and now it’s time to forgive myself and keep moving. Easier said than done. It will be hard not to blame myself for not losing enough weight bc of this fallback.

That’s what I have my friends here for, or am I just talking to no one out there? Either way, it’s helping a whole lot. Thanks for following me- and supporting.
